The vegetarian version of lime roasted chicken. A good side for any type of roast, or if you're lazy as the whole meal.

Veggies
1 Russet Potato (cubed)
2 Leeks (chopped)
5 Mushrooms (quartered)
2 Medium Carrots
Marinade/Sauce
⅛ cup Olive Oil
2 Limes (Juice of)
2 tsp Capers
Salt & Pepper (to taste)

Preheat the oven to 400° degrees (Fahrenheit).

Wash and chop up all the veggies and place in a casserole dish.

Mix together the marinade ingredients and pour over the chopped veggies. If you want to make extra sauce it's worth it.

Cover and cook in the oven for 20 minutes.

If you would like to crisp the veggies a little bit remove the cover and broil in the oven for 5-8 minutes.
