Crepes

A recipe given to me by a french guest who stayed with us recently. I had no idea crepes were so versatile, they can be easily made savory or sweet with a variety of fillings - just use your imagination!

 1 ½ cups Flour
 2 Eggs
 2 ¼ cups Milk (can use almond or oat)
 ¼ cup Butter (melted)
 3 tbsp Rum or whiskey
 1 pinch Salt
Fillings
 Chopped sauteed mushrooms, spinach, onions | thawed raspberries with icing sugar | sliced ham and cheese

Break the eggs in a mixing bowl and beat with a whisk.

Mix the remaining wet ingredients with the egg.

Pour the flour in a separate bowl and make a well for the liquids.

Add the liquid ingredients and mix with the whisk until the batter is smooth.

Cover and set the batter aside and let rest for minimum 20 minutes.

When you are ready to cook the crepes, heat a large flat frying pan under medium heat. (a few minutes to preheat)

Spray pan lightly with vegetable oil and then using a soup ladle, pour one ladle of batter into the pan, and turn the pan from side to side to let the batter flow in the pan and fill it (should be fairly thin).

Let the crepe cook for 2-3 minutes, you will see that it is cooking when the batter looks 'dry'.

Carefully flip the crepe and let cook for an additional minute.

Flip out of the pan and enjoy with your favourite fillings! (Sweet: Raspberries and whipped cream, bananas and peanut butter, blueberries and cream - Savory - Sauteed spinach and mushroom, ham and cheese - get creative!)
