Baked oatmeal that tastes like warm banana bread fresh from the oven. We added boost of protein powder for an extra boost of morning protein!

1 ½ cups mashed banana (about 2-3 bananas)
2 Eggs
½ tsp Vanilla Extract
1 tsp Baking Powder
½ tsp Cinnamon
1 pinch Nutmeg
⅛ cup Brown Sugar (omit if using sweetened protien powder)
2 cups Almond Milk
¼ cup Unsweetened Protien Powder (I used Hemp Yeah Balanced Protien + Fibre)(if using sweetened protien powder like vanilla, omit brown sugar)
2 ½ cups Rolled Quick Oats
½ cup Chopped Walnuts

Preheat oven to 375F.

In a large bowl, mush up the bananas with a fork add in the eggs, vanilla, baking powder, cinnamon, a pinch or two of nutmeg and brown sugar (if using). Mix thoroughly.

Add in the almond milk and protein powder and mix thoroughly again.

Now add the rolled oats and half of the walnuts stirring to combine.

Pour the mixture into a 8"x8' or 10"x9" casserole dish and transfer to the oven. Sprinkle the remaining walnuts on top.

Bake for 45 minutes and serve warm. This will also keep in fridge for about a week.
